black sesame & carrot breakfast bread

Preparation time: Approx. 30-40 mins including baking time

Makes a small loaf - apron 3-4 serves

Ingredients

1/4 cup buckwheat flour

3 medjool dates

1 tbsp chia seeds soaked in 1/4 cup water

1 tbsp black sesame seeds

1 med carrot grated (approx. 1/2 cup)

2 tbsp ghee

1/2 tsp cinnamon

1/4 tsp cardamom powder

1/8 tsp mineral/ celtic/ rock salt

1/4 cup water

To bake

Preheat the oven to 180 degrees.

Combine flour, sesame seeds, spices and salt in a mixing bowl and stir well.

Mix in the ghee before adding the shredded carrot and soaked chia seeds - stir well.

Add the water bit by bit and mix to make a dough/ batter like consistency. You may need more or less water depending on the moisture of the carrots. The mixture should be moist, but not at all runny.

Line a baking tray with an unbleached and eco-friendly baking paper.

Place the mixture into the tray. depending on the size of the tray you may only need to use half of the space. Use a spoon to flatten/ mould the batter into a nice shape

Sprinkle with some extra sesame seeds and bake for approximately 20-30 mins, or until you can poke a knife into the loaf and it comes out clean.

Allow the bread to cool for 5-10 mins before removing from the tray. Enjoy fresh, buttered with a little extra ghee if desired.

Tips & Notes

Buckwheat can be nice for all doshas when eaten in moderation. This bread can make a lovely breakfast option or as an augmenting side to a bowl of soup. Sweet potatoes may also be used in place of the carrots and you may like to try adding some garden herbs to the mix such as fresh parsley or coriander and reducing the amount of dates to 1 for a more savoury option. Ensure the flour you are using is fresh, so it contains optimal amounts of prana. If you can mill your own flour, even better!
