sweet & simple cookies

I make a variation of these simple cookies several times a week for a sweet and grounding mid morning snack for my children or for a sweet side to a savory meal. The ingredients are simple, pure and nourishing. The preparation is simple enough that I can bake these cookies fresh in the morning before the school run. A Mother from school recently commented “What? you bake in the morning?” Trust me I’m no super woman, these are just super simple cookies that anyone can easily whip up. Let me show you how:

Preparation time: Approx. 30 mins including baking time

Makes 6 cookies


Ingredients

3/4 cup buckwheat flour

1/4 cup rolled oats

3 tbsp ghee (or oil of choice)

1/4 tsp ground coriander

1/4 tsp cinnamon power

1/4 tsp cardamom powder

Pinch of mineral/ rock salt

1/4 cup of dried raisins

3 tbs coconut sugar (can use less if desired)

1/2 cup spring/ filtered water


To cook

Place the flour, oats, salt, spices, coconut sugar and raisons in a bowl and mix well. Mix in the ghee allowing it to dispute evenly. Gradually add the water while mixing consistently to form a sticky batter. Use a tablespoon to spoon the batter onto a greased baking dish - do not play with the dough or push it down as this will cause the cookies to stick. Bake for approx. 20 minutes or until golden brown and cooked all the way through.


Tips & Notes

This recipe may act as a base for your own experimentation. Mix up the spices and ingredients, for example; spelt can be used instead of buckwheat flour, ground nutmeg and fennel can make a nice substitute for spices, try maple syrup instead of coconut sugar, other additions may include a splash of rose water, sunflower seeds, grated carrot… the combination possibilities are endless. Baking is more drying than other cooking methods, so be sure to counteract the dryness by bringing in the opposing qualities of hydrating and moist for example, add a little extra spread of ghee when serving or consume as a side to a hydrating meal such as soup.
